Being a fine food lover, Monti at 1-Pavilion is listed as one of my favourite fine dining restaurants. It is Singapore Bay’s most beautiful dining offering authentic, detailed-oriented Italian cuisine, extensive and refreshing cocktail selection and breath-taking waterfront views of the entire Marina Bay. Their floor-to-ceiling windows provide natural sunlight in the day and city's twinkle lights at night. Aside from amazing view, service was excellent with a whole lot of jazz. There's nothing like Monti. Monti meets all my expectations!

Monti serves extensive menu of Italian appetisers, pasta, mains and dessert for a degustation dinner. Food portions were quite small. However, it was ideal to order several dishes for two persons and share as traditional Italian style. Many of the ingredients were sourced from Italy including the choice of light to full flavoured olive oils on the tables. While waiting for our order, we enjoyed the view while listening to the jazz. A late evening of live jazz at Monti with its soft atmosphere coupled with a romantic dinner was a lovely way to celebrate our wedding anniversary.
Bread At The Start Of The Dinner |
As a sign of hospitality, they served two hot croissants to take away our hunger pains while waiting for our meals. A tasty hot bread is a nice way to start off dinner. Bread was fragrant and crispy outside, soft and fluffy on the inside. It was delicious when I dipped the bread on the high quality butter.
Fregola Seafood |
Our first main course was fregola seafood. Fregula is a type of Italian pasta from Sardinia. Fregula comes in varying sizes, but typically consists of semolina dough that has been rolled into balls 2–3 mm in diameter and toasted in an oven. The toasted pearl sized Sardinian pasta had amazing nutty, slightly bittersweet flavour and chewy. Fregula was mixed with variety of seafood such as prawn, yellow fin tuna and Hokkaido scallop, accompanied by white wine, cherry tomato, Italian parsley and basil. Seafood was tender and juicy. All fresh ingredients were coated with yummy lobster bisque.
U.S. Sirloin Steak (200g) |
We ordered 200g of U.S. Sirloin Steak accompanied by roasted asparagus, corn and red onion jam. The sirloin steak was cooked at medium well. There was warm brown pink in the center. Steak was lean, moderately tender, slightly peppery and juicy. It had no bones and very little fat, making it taste delicious. Corn was sweet and tasty. Roasted asparagus was a little bit tender and charred. It was delectable when coated with some red onion jam at the side of the plate.
Ravioli |
Ravioli was filled with burrata cheese, burnt butter sauce and pistachio crumbs. Ravioli was soft and smooth, filled with luscious, heavy cream and rich burrata cheese. Ravioli was tossed with burnt butter sauce and crunchy pistachio crumbs, which had very unique taste, a combination of cheesy and slightly sweet with caramel aroma.
